Mushroom, Feta & Onion Braaibroodjies

I wanted to make traditional braaibroodjies to accompany our braai last night, but realised a little too late that I didn’t have any tomatoes. What I did have were leftover sliced mushrooms and Woolies’ feta cheese with sundried-tomatoes and basil.

Improvise, I did! The result was a new tasty braaibroodjie combo.

Who’s hungry? Vincent and Roan each want 2, so this recipe serves up 4 delicious braaibroodjies.

Ingredients

  • 1 red onion, sliced
  • 100 g mushrooms, chopped
  • 3 wheels of feta with sun-dried tomato & basil
  • 100 g cheddar cheese, sliced
  • 8 slices of bread
  • margarine
  • 150 ml chutney
  • 40 ml sriracha mayo

Make “broodjies”

Spread margarine on 2 slices of bread.

Flip the slices of bread over so the margarine is on the outside. Then plop dollops of chutney and sriracha mayo on each slice.

Spread it all over.

Now add chopped onion to one slice.

Add the mushrooms.

Add slices of feta.

Finish it off with cheddar cheese.

Then close her up and repeat the process until all 4 braaibroodjies are done.

Braai the “broodjies”

Toast them over warm coals. Remember to keep an eye on them and turn regularly so they don’t burn.

Getting there.

Done, son.

Take them off the grid and serve with your main dish.

A different take on the traditional braaibroodjie, this one includes earthy flavours with a subtle spicy bite to it.

Ingredients

  • 1 red onion, sliced
  • 100 g mushrooms, chopped
  • 3 wheels of feta with sun-dried tomato & basil
  • 100 g cheddar cheese, sliced
  • 8 slices of bread
  • margarine
  • 150 ml chutney
  • 40 ml sriracha mayo

Directions

  1. Spread margarine on 2 slices of bread.
  2. Flip the slices of bread over so the margarine is on the outside. Then plop dollops of chutney and sriracha mayo on each slice and spread evenly.
  3. Now add chopped onion to one slice.
  4. Add the mushrooms on top.
  5. Add slices of feta cheese.
  6. Finish it off with slices of cheddar cheese.
  7. Close the sandwich and repeat the process until all 4 are complete.
  8. Place the braaibroodjies on a grid and cook over medium to low heat coals. Remember to keep an eye on them and turn regularly so they don’t burn.
  9. After turning about 4 times in total, they should be perfectly brown and ready to enjoy with a main meal.
