Breakfast Burritos

What to do when last night’s leftover chilli con carne is still on the stove and there are a couple of tortilla wraps in the fridge? Make a knockout breakfast burrito — duh!

Who’s hungry? Vincent and I, so this is a brekkie for two.

Ingredients

  • 2 tortilla wraps
  • leftover chilli con carne (about 400 g)
  • 100 g Cheddar cheese, grated
  • 2 eggs
  • half of an avocado
  • wild rocket leaves (arugula)
  • 4 tbsp sour cream
  • 2 tbsp hot chutney
  • Sriracha sauce (2 squirts)
  • salt & pepper

Make your burritos

Toast the tortilla in a dry pan for about 30 seconds on either side. Remove from the pan and spread chutney on the face-up side.

Add a generous helping of chilli con carne to one half of the open tortilla. You’ll fold the “clean” half over at the end.

Fry the eggs to your liking, and place it on top of the chilli con carne.

Sprinkle grated cheese on top of the egg.

Add avocado slices and drizzle Sriracha sauce on top. Add salt and pepper.

Place two dollops of sour cream on top and add a generous amount of rocket leaves.

Fold the burrito closed and dig in!

The beauty about a breakfast burrito is as long as you've got some leftover meaty filling and an egg, you're good to go! This one is next level lekker though, so if you can add chilli con carne, sour cream, avo and cheese too, you're set for a scrumptious start to your day.
