Sweet & Sour Salmon with Veg & Linguine

We visited the Lourensford Market last Sunday. What a great experience! There was a wide variety of food, craft beer, live music, and many market stalls to explore. The epic vintage car displays are also a must-see.

Among the things I bought were 4 fresh salmon fillets for only R50 a pop. A bargain, compared to supermarket prices.

Who’s hungry? Vincent and I, so this recipe is for two people.

Ingredients

  • 4 portions of salmon (100 to 120 g each)
  • 250 g sliced mushrooms
  • 500 g julienne stir-fry veggies (green and red sweet bell peppers, carrots, courgettes, onion)
  • 1 sachet sweet & sour stir-fry sauce
  • 250 g linguine pasta
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tsp chilli flakes
  • 1 tbsp origanum
  • 2 tsp lemon juice
  • salt & pepper

Let’s cook

Sauté the veggies in olive oil. Once softened, add the herbs and stir through.

Cook the pasta in salty water. Drain when done and set aside.

Add the salmon skin-down in the middle of the pan and cook for 5 minutes. Sprinkle chilli flakes, salt and pepper on top. Drizzle with lemon juice.

Pour the sweet & sour sauce on top. Mix it into the veggies carefully. Turn the fish over and cook another 5 minutes.
