Salmon on a bed of Veggie Noodles

I often find myself daydreaming about Woolworths’ spinach and cauliflower noodles.

As a hardcore no-carber I can honestly say nobody does carb-free noodles like Woolworths does. I’ll even go a step further and say sometimes I prefer the taste and texture of these noodles to actual pasta!

So off to Woolies I went to get a pack of veggie noodles, and in the process also grab some salmon, stir-fry veggies and a stir-fry sauce too. I can’t take any credit for this meal. It’s all Woolies in all its ‘easy to cook’ wonder!

Who’s hungry? Vincent and I, so this recipe serves two.

Ingredients

  • 1 pack spinach & cauliflower noodles
  • 1 pack stir-fry mix julienne veggies
  • 1 sachet Thai coconut stir-fry sauce
  • 2 packs Norwegian salmon (I got two different kinds)
  • 1 tbsp garlic and herb spice
  • 2 tbsp olive oil
  • salt & pepper

Let’s cook

I don’t know if I can even call this cooking because it feels like it’s over before it has even begun; this goes so quickly! So pour your glass of wine now and then get going.

Add the stir-fry veggies to a hot pan with the olive oil already heated up.

Stir it for 30 seconds and then spice the hell out of it.

Mix it all nicely and add the noodles.

Give it a couple of good stirs and then add the sauce. Turn the heat down to medium and stir for 2-3 minutes.

Make a hole and put the fish in the center of the pan (skin side down).
Put a lid on the pan and let it rest like that for about 2 minutes.

These salmon pieces are already cooked so they only need to be heated, not cooked.

And we’re done!

Dish up and enjoy.

You don't need any skill or much time to make this fishy favourite of mine, but you may need a little help from Woolworths' great pre-cooked salmon parcels.

Ingredients

  • 1 pack spinach & cauliflower noodles
  • 1 pack stir-fry mix julienne veggies

  • 2 packs Norwegian salmon, ready to eat (I used two different kinds)
  • 1 tbsp garlic and herb spice
  • 2 tbsp olive oil
  • salt & pepper

Directions

  1. Add the stir-fry veggies to a hot pan with the olive oil already heated up. Stir it for 30 seconds and then spice the hell out of it.
  2. Mix it all nicely and add the noodles.
  3. Give it a couple of good stirs and then add the sauce. Turn the heat down to medium and stir for 2-3 minutes.
  4. Make a hole and put the fish in the center of the pan (skin side down). Put a lid on the pan and let it rest like that for about 2 minutes. Dish up and dig in!
