I’m in the mood for something tomato-y, quick and easy, filling, and delicious. Pasta is the answer! (Well, fake pasta for me.)
I adore Woolworths’ Arrabbiata pasta sauce, so I didn’t even think twice about the base for my pasta last night. This sauce means no effort whatsoever is required, and you just know your meal is going to be scrumptious. Throw in some bacon and you’ve got a winning dish!
Who’s hungry? Vincent and I. Naturally, I made enough for leftovers. Everybody knows pasta sauce ages really well!
- 760 ml Arrabbiata sauce
- 400g julienne vegetables
- 250g cauliflower noodles
- 250g linguine pasta
- 250g bacon, cut into 2 cm x 2 cm pieces
- 3 tbsp olive oil
- 1 tsp garlic & herb seasoning
- salt & pepper
Boil a pot of water, add some salt and then add the linguine. Leave the lid slightly ajar so it doesn’t boil over.
Heat oil in a deep saucepan and add the julienne veggies. Spice ’em up.
3 minutes later, add the bacon.
Once the bacon has just about cooked through, add the sauce.
Let it simmer on very low heat while you gently fry the cauli noodles in a small pan or pot with a little olive oil. It only takes about 3 minutes.
By now your linguine should be done too. Strain it.
Sprinkle some feta on top.
Give it a nice mix with a fork and add some more sauce if necessary. One can never have too much sauce!
