Carb Free Wraps with Honey-glazed Bacon & Green Pepper Filling

You know I’m a sucker for carb free anything. Pick n Pay has finally joined the bandwagon and now offers carb free cauliflower-based wraps called ‘Carb Sharp Tortilla Wraps’ that can be heated and enjoyed within seconds. Good on you, PnP!

Naturally, I scavenged my pantry and bottom fridge drawer for filling ingredients. I found a pack of bacon, lettuce, a green pepper, an onion and double cream plain yoghurt to name a few. More than enough to make something tasty.

Who’s hungry? Vincent and I, so this recipe serves two.

Ingredients

Not pictured here: honey & soy sauce
  • 300 g shoulder bacon, diced
  • 1 green pepper, sliced
  • 1 onion, sliced
  • carb sharp tortilla wraps (there are 5 in a pack)
  • quarter of a lettuce head, shredded
  • 5 tbsp double cream plain yoghurt
  • 5 tbsp chutney
  • 2 rounds of feta cheese
  • 1 tbsp honey
  • 2 tsp soy sauce
  • olive oil for frying
  • salt & pepper

Make your filling

Fry the onion and bacon over medium heat.

When the onion slices have sweated and the bacon starts to brown, add the green pepper. Season with salt and pepper.

Add the honey and soy sauce and cook until the filling ingredients have caramelised with the honey.

Assemble your wraps

One by one, heat the wraps in a dry frying pan over medium heat. It should only take about 15 seconds per side.

Lay the warm tortilla on a plate and spread a tablespoon of chutney all over it.

Now add shredded lettuce and then plop some of the bacon, onion and green pepper filling on top.

Keep the bottom quarter of the wrap free from filling to fold it over later.

Crumble some feta on top and then add a tablespoon of yoghurt.

Fold your tortilla

Start with the bottom.

Then one side.

And now the other.

Dig in!

When you’ve repeated the above steps 5 times, your wraps are ready to devour. Have at it!
